Scrambled eggs was my favourite as a kid. My mom would do a simple scrambled egg with no onions- just some butter and milk. I tried this version with Sarah and she refused to have it after one bite. She is a lover of veggies and so I decided to top her eggs with her favourite veggies. Adding edamame was accidental. Now there are a lot of debates on feeding edamame to kids. For those among you who aren’t aware of the term- ‘edamame’ is young soy bean and a rich source of protein. Literature suggests they are safe for kids if served in moderation.

This recipe has herbs, milk and spices. It was actually our family breakfast and so Sarah ate it silently with no protest. The only thing you need to be careful is how well you cook the veggies. If you cook them well it will be easy for your kid to chew especially edamame that risks choking. Sarah loves toasts and she hate 1 toast and 1/4 cup of this scrambled eggs. She ate more of carrots than edamame but she did not spit a bean that came in her mouth. I don’t plan feeding her on edamame regularly considering their cost and the fact that we have other sources of protein. But I loved the fact that she had scrambled eggs the first time.

Ingredients for Scrambled Eggs

Eggs- 3

Edamame- 50 g

Carrots- 2

Celery- 1 stalk

Onion- 1

Olive oil- 2 tsp

Milk- 1/4 cup

Pepper- a pinch

Salt- to taste

Directions

Pressure cook the carrots and the shelled edamame up to 2 whistles with 1 cup water. This will make them nice and soft and save your time. Heat a skillet and add the oil. Throw in the onions and saute till they soften. Whisk the eggs with milk, salt and pepper. Add this mixture to the onions and cook them over medium flame. Throw in the cooked veggies and celery when the eggs are semi cooked. You can stir and saute the scrambled eggs to the consistency of your preference. I do it runny at times and dry on other occasions. This time I cooked them dry. Add a dollop of butter for making your scrambled eggs rich but this optional. Serve with toast.

Note: Adding celery is optional sometimes your kid might not prefer the flavours of herbs so try it once and see. Adding cilantro brings is a different flavour and you may want to try this if you don’t find celery.
